Ginger grows in the tropics and subtropics and is one of the most famous culinary herbs, both fresh and dried and ground. The tuber has an aromatic smell, the taste is sometimes burning hot and spicy. Ginger aids digestion, strengthens the stomach and is considered to stimulate the appetite.
All year round we obtain the tubers from our sister company Asica Peru Farms from sustainable production, although availability is rather low from January to April. Ginger is a herbaceous plant with a growth height of 50-100cm, which forms tubers underground. Ginger is grown in rotation, i.e. every few years the fields are planted alternately.
After harvesting, the roots are washed in the packing house and then dried in the open air. This even and slow drying in the sun gives the ginger its golden shine.
Ginger should be stored in a cool and dark place. Once cut, it stays fresh for at least 3 weeks in a damp kitchen roll and airtight in a fresh bag in the vegetable compartment.
